A quick and easy healthy snack
It is too easy to grab a biscuit or a bag of crisps when your energy and blood-sugar levels start to drop. The key is to be organised and when cooking to make larger batches of food that you can snack on throughout the day.
We suggest you make yourself some tasty and nutritious chickpea patties that are delicious, quick to make and a great on-the-go snack.
Chickpea patties recipe:
~ 2 x canned chickpeas (rinse with water)
~ Juice of 1 lemon
~ In a dry pan heat a teaspoon of cumin seeds, small amount of fennel – any seeds you have in cupboard – then grind in mortar & pestle
~ Add teaspoon of spices, again any you have in cupboard like turmeric, garam masala and paprika
~ Good handful of fresh herbs – parsley, basil and coriander
~ Any leftover veg from day before such as sweet potato, squash or carrots
~ Pepper and a pinch of Himalayan sea salt
~ Blitz it all up in a blender with a good tablespoon of tahini
~ Make little patties and fry up in coconut oil, a few minutes on each side until golden brown and heated through
Munch on them when you need a pick me up, also lovely with a salad and stuffed in a pitta for lunch – enjoy!
