YEAST-FREE SODA BREAD
OATLEY SODA BREAD
Our Oatley Soda Bread recipe is a real winner, easy to make and, most importantly, tastes delicious! Based on simple no-frills Irish soda bread recipe just replacing traditional buttermilk with a dairy-free substitute. Here we use oat milk, but you can also use soya milk or almond milk – an unsweetened alternative is best. The addition of lemon juice (alternatively use apple cider vinegar or white wine vinegar) is essential for acidity to aid the fermentation process in place of the yeast.
Ingredients:
500 g wholemeal flour*
1 tsp. bicarbonate of soda
Pinch of sea salt*
400 ml of Oatley milk*
2 tbsp of lemon juice or fresh squeezed
2 tsp of Jersey honey or agave syrup*

Instructions:
Heat oven to 200 °C / 180°C fan over.
Mix together the flour, salt and bicarbonate in a bowl.
Lightly dust a baking tray with some flour.
Mix together the Oatley milk with lemon juice and honey and leave for 5 minutes.
Make a hole in the flour mixture and slowly pour the milk in and mix together with a knife until the whole thing comes together into a sticky dough.
Take the sticky dough and make into a ball. Put the ball on the tray and using a sharp knife, make a deep cross across the top.
Put in the oven for 35 minutes until the crust is golden brown.
For a Wholesome Seeded Soda Bread add 75g mixture of sunflower seeds, sesame and pumpkin seeds, remember to reduce the flour portion by the same amount.
