A RECIPE THAT OOZES SUMMER
This easy peasy lemon squeezy recipe by Lydia Gerratt has to be one of the most delicious ways to eat peas. Add creamy soft feta, fresh mint and the ingredient that makes all the flavour difference, lemon zest! Lydia recommends: ‘This is also the time to break out that super special bottle of extra virgin olive oil you have in the kitchen cupboard and drizzle it liberally all over the peas and feta.’
She also suggests, as it makes or breaks this dish, to buy fresh feta from a cheese counter as the general supermarket feta tends to be bitter and dry. ‘I’ve found the best places to buy creamy, smooth tasting feta is from a middle eastern supermarket – Turkish, Lebanese, Syrian, Persian – all of them will have a huge range of feta. The feta I choose is displayed as great big cubes, sitting in brine, in large containers in the fridge – you help yourself to how much you want and really is the best!’
Peas with Feta, Mint and Lemon Zest recipe:
Serves 1 adult (scale up for more people)
Miraculous ingredients: good quality creamy feta (from a middle eastern supermarket), extra virgin olive oil
Ingredients:
200g Frozen petit pois peas (a large bowl full)
50g Feta cheese, crumbled
5g Fresh mint leave, finely chopped
The zest from ½ a lemon
Extra virgin olive oil
Method
Cook the frozen peas in boiling water for a couple of minutes, until they are completely defrosted and warm. Crumble the feta on top of the peas, scatter with mint leaves and lemon zest, and drizzle generously with olive oil. We told you, easy peasy and totally delicious.
